Strawberry Layer Cake

Here's a recipe for a "cool and refreshing" Strawberry cake
that looks GREAT and tastes even better!

~~~YOU  WILL  NEED~~~

1 Yellow or White Cake Mix
1lb. Fresh Strawberries
12 0z. Cool Whip
8 0z. Sour Cream
3/4 cup Sugar
1 tsp. Vanilla

Prepare cake mix according to package and bake in
2 - (8 or 9") round cake pans.

Allow the cake to cool thoroughly after removing from the pans.

WHILE THE CAKE IS COOLING~~~

Wash the strawberries.
Remove stems and leaves and then lightly towel dry.
Dice all but 6 strawberries into 1/2" pieces.

Combine the Cool Whip, sour cream, sugar and vanilla.
Add the diced strawberries and stir gently.

WHEN CAKE IS COMPLETELY COOL...

Take a knife and cut each layer horizontally into two pieces...
you should now have 4 layers.

Place one cake layer on a cake plate and then spread
with a layer of the Cool Whip mixture.
Add another cake layer and then another layer of Cool Whip.
Continue until the cake is assembled.

Frost the sides and then top of cake with the remaining
Cool Whip mixture.

Garnish with the remaining 6 strawberries
cut in half and arranged on the top of the cake.

Store in the refrigerator.
Tastes best if made a day ahead of time. 

HINT:  INSERT EITHER TOOTHPICKS OR PLASTIC COFFEE STIRRERS
INTO THE CAKE TO KEEP THE LAYERS FROM SLIDING!!!
